What the per pound price tells you

Almost every meat counter, produce bin and bulk aisle in the US prices food by the pound. The tag on the shelf gives the price per pound for that one item, which is useful until you have to choose between a 1 pound pack, a 3 pound family pack and a 10 pound box. Then the only fair comparison is the price per pound of each option.

The number answers a simple question: what does a pound of this food cost me? Once you have it for each package, the math stops being about package size and starts being about the food. A $14.97 pack sounds like a lot next to a $5.49 pack, but if it holds 3 pounds it is cheaper per pound, and that is the number that shows up on your grocery bill over a year.

It also lets you compare across stores and across cuts. Chicken thighs at $1.99 per pound and pork shoulder at $2.49 per pound are easy to rank, even though the packages have nothing in common.

The formula, and the weight to use

Price divided by pounds. If the label is already in pounds, you are one division away from the answer.

Example: a 3.2 pound pack of chicken at $12.99. 12.99 / 3.2 = 4.06, so the pack runs $4.06 per pound. Per ounce that is 4.06 / 16 = 0.25, and per kilo it is 4.06 x 2.20462 = 8.95.

Example: a 24 ounce pack at $7.49. Twenty four ounces is 1.5 pounds, so 7.49 / 1.5 = 4.99, which is $4.99 per pound and $0.31 per ounce.

Use net weight, the number printed after "Net wt" on the label. That figure already excludes the tray, the plastic wrap and the absorbent pad, which is what you want. It does not exclude a salt solution or a glaze, so a package that says "up to 10% solution added" is carrying water at meat prices.

Converting ounces, grams and kilos to pounds

Half the packages in a store are labeled in something other than pounds. Convert first, then divide.

Label unitIn poundsEveryday example
1 ounce0.0625 lba 4 oz burger patty is a quarter pound
1 pound1 lb16 ounces
1 kilogram2.20 lba 2.5 kg bag is 5.51 lb
100 grams0.22 lba deli portion, roughly

The two conversions worth memorizing are 16 ounces to a pound and 2.2 pounds to a kilo. With those, a 500 gram pack is 1.1 pounds, a 1 kilo bag is 2.2 pounds, and a 2.5 kilo bag of rice is 5.51 pounds. The calculator handles the rest, including grams, which is where most people get stuck doing it in their head.

One warning on volume. A quart of berries is not a pound of berries, and a gallon of milk weighs more than 8 pounds. Volume to weight only works when you know the density, so compare like with like.

Worked example: ground beef in three pack sizes

Same product, three packages. The 1 pound pack is $5.49, the 3 pound pack is $14.97, and the 10 pound box is $42.90.

Per pound: 5.49 for the small pack, 14.97 / 3 = 4.99 for the family pack, and 42.90 / 10 = 4.29 for the box. The box is 22 percent cheaper per pound than the single pound pack. Buying ten single packs would cost $54.90, so the box saves $12.00 on the same 10 pounds.

PackPricePer poundPer 4 oz serving
1 lb$5.49$5.49$1.37
3 lb$14.97$4.99$1.25
10 lb$42.90$4.29$1.07

The serving column is the one to look at if you cook for two. At 4 ounces a serving, the box brings dinner protein down to $1.07 a plate against $1.37, which is 30 cents a meal. That is worth having only if the box gets eaten, and that is the next problem.

Worked example: bone in chicken and the yield problem

Per pound pricing compares what you buy. Yield decides what you eat. A 3 pound pack of bone in chicken thighs at $1.99 per pound costs $5.97. Bones, skin and trim take about 30 percent, which leaves 2.1 pounds of meat. The real cost is 5.97 / 2.1 = 2.84, so $2.84 per edible pound.

That still beats boneless thighs at $3.49 per pound, which is why the bone in pack is usually the better buy for a braise or a tray bake. Change the numbers and the answer flips: at $2.79 per pound for bone in against $3.29 for boneless, the bone in pack works out to $3.99 per edible pound and loses.

The same math applies to whole fish. A whole fish at $4.99 per pound with a 45 percent yield gives fillets at 4.99 / 0.45 = 11.09, or $11.09 per pound of fillet, so fillets at $9.99 per pound are the better deal. Ground beef has its own version: 1 pound at $5.49 that loses 25 percent of its weight in the pan leaves 0.75 pounds, which is $7.32 per cooked pound.

Bulk bags, freezer space and the break even point

Bulk pricing is real, but it is not free. A 40 pound bag of rice at $24.99 is $0.62 per pound. The same rice in 5 pound bags at $6.49 is $1.30 per pound. Buying 80 pounds in bags costs 16 x 6.49 = $103.84, against $49.98 for two 40 pound bags, a saving of $53.86.

The catch is storage and shelf life. Two 40 pound bags take about 2.3 cubic feet of space and need to stay dry for a year or more. White rice handles that. Brown rice, nuts and whole grain flour do not, and a bag that goes rancid has a per pound cost of zero value.

A workable rule: buy bulk only what you will finish in the time the food keeps, and count the freezer space before the price. A chest freezer holds roughly 35 pounds of meat per cubic foot, so a 10 pound box of ground beef takes about a third of a cubic foot. That is easy. Four boxes is a decision about the freezer, not the price tag.

What the per pound price leaves out

The shelf price is the food. What you pay at the register adds tax, and what you end up using depends on waste.

Sales tax applies to the total. A pack at $4.06 per pound becomes about $4.39 per pound at 8.25 percent, and prepared food is taxed in some states where raw meat is not. Membership stores charge a fee that has to be spread across the year: a $65 membership only pays for itself if the per pound savings add up to more than $65.

Trim and spoilage are the other two. A third of a bulk bag thrown out raises a $0.62 per pound price to $0.93, which is close to what the small bags cost anyway. The per pound figure is the start of the decision, not the end of it.

For the rules behind net weight and unit pricing, the NIST Office of Weights and Measures publishes the handbook US stores follow. USDA Market News posts retail and wholesale price reports by region, and the FDA food labeling pages spell out what net weight must include.

Frequently asked questions

How do I calculate price per pound?

Divide the price by the weight in pounds. A 3.2 pound pack at $12.99 is 12.99 / 3.2 = $4.06 per pound, which is $0.25 per ounce.

How many ounces are in a pound?

Sixteen. A 24 ounce pack is 1.5 pounds, so at $7.49 it runs $4.99 per pound.

How do I convert grams to pounds?

Divide grams by 453.59. A 1,000 gram bag is 2.20 pounds, and 100 grams is 0.22 pounds.

Is a 3 pound pack at $14.97 cheaper than 1 pound at $5.49?

Yes. The 3 pound pack is $4.99 per pound against $5.49, so it saves $0.50 per pound, or $1.50 across the 3 pounds.

What is a normal price per pound for ground beef?

Regular 80/20 ground beef commonly runs $4.50 to $6.50 per pound. A 10 pound box at $4.29 per pound is a good price if you have the freezer space.

How much does bone cost per pound of meat?

Three pounds of bone in thighs at $1.99 is $5.97. With 30 percent loss you get 2.1 pounds of meat, which is $2.84 per edible pound.

Is a whole chicken cheaper than parts?

Often, once you use the bones. A 5 pound bird at $1.49 per pound is $7.45, and a 60 percent yield gives 3 pounds of meat at $2.48 per pound, plus stock from the frame.

How do I price whole fish against fillets?

Divide by the yield. A whole fish at $4.99 per pound with a 45 percent yield costs $11.09 per pound of fillet, so fillets at $9.99 are the better buy.

Does the per pound price include the packaging?

Net weight excludes the tray and wrap, so the price is for food. It does include added solution: a 10 percent solution means 10 percent of that pound is water.

How much freezer space does 40 pounds of meat take?

About 1.1 cubic feet, at roughly 35 pounds per cubic foot. A standard 7 cubic foot chest freezer holds around 245 pounds.

What does rice cost per pound in a 40 pound bag?

At $24.99 the bag works out to $0.62 per pound. The same rice in 5 pound bags at $6.49 is $1.30 per pound, more than double.

Should I compare per pound or per 100 grams?

Per pound for US shopping, since that is how stores price meat and produce. If a label is metric, 100 grams is 0.22 pounds, so multiply the per 100 gram price by 4.54.

Why is the price at the register higher than the shelf price?

Sales tax and weight rounding. A $4.06 per pound pack becomes about $4.39 with 8.25 percent tax, and the scale rounds up to the next cent.
