Egg Substitute Calculator

For 2 eggs, the go-to swap is a flax egg: 2 tbsp ground flaxseed plus 6 tbsp water, which is 1 tbsp flax and 3 tbsp water per egg. For lift use 2 tbsp vinegar with 2 tsp baking soda; for moisture use 1/2 cup applesauce.

Type in how many eggs a recipe needs and what those eggs are doing in it, and the calculator returns the exact amount of flax, chia, applesauce, banana, aquafaba or tofu to use instead.

What the egg is doing in your recipe

An egg does four different jobs in a recipe, and it usually does more than one at a time. Before you pick a substitute, work out which job matters most, because the wrong swap fails in a predictable way.

No single substitute covers all four. Flax and chia handle binding. Applesauce, banana, yogurt and buttermilk handle moisture. Vinegar with baking soda, and oil with water and baking powder, handle lift. Pick the one that matches the job, and if the recipe needs two jobs done, use two substitutes together.

Two federal sources are worth keeping open while you cook. The FDA's egg safety page explains why eggs need refrigeration and careful handling, and USDA FoodData Central has the exact weight, protein and water content of a large egg, which is what the ratios below are built on.

Every substitute, and how much to use

These ratios replace one large egg. Multiply by the number of eggs in your recipe, then sanity check that the total does not overwhelm the batter.

The liquid egg substitute and the commercial powder are the only two options here that are meant to be used in large amounts. Everything else is a partial stand-in, and the results get worse the more eggs you replace.

Worked example: replacing 2 eggs in a batch of muffins

Your muffin recipe uses 2 eggs, 1 cup of milk, 1/2 cup of oil, 2 cups of flour and 2 teaspoons of baking powder. The eggs are doing moisture and a little binding, so applesauce is the closest match.

Two eggs out of a four-egg recipe is the practical limit for any single substitute. At 2 eggs replaced the muffins come out a little denser and a little sweeter than the original, which is usually fine. At 4 eggs replaced with applesauce the muffins turn rubbery and the tops stay pale.

If you want more lift in an egg-free muffin, add 1 tablespoon of white vinegar plus 1 teaspoon of baking soda to the wet ingredients, on top of the applesauce. The acid and base react immediately, so get the batter into the oven within a few minutes of mixing.

Worked example: replacing 1 egg in meatloaf

Meatloaf needs the egg for binding and nothing else. There is no lift to worry about, which makes this the easiest substitution in the kitchen.

Grind the flaxseed fresh if you can, because pre-ground flax loses its gelling power over time. Whole flaxseed will not work at all, it passes straight through without thickening.

For a 2-pound meatloaf, one flax egg is plenty. If the loaf still crumbles when you slice it, the fix is usually more binder in the form of breadcrumbs or oats, not more flax. Two flax eggs in a 2-pound loaf make the texture noticeably pasty.

Chia works the same way if you are out of flax, at 1 tablespoon of chia seeds to 3 tablespoons of water per egg. Expect small dark flecks in the finished loaf.

How to choose the right substitute

Work through the recipe rather than picking a substitute at random.

When in doubt in a baked good, pick the substitute that adds moisture. A slightly dense cake is edible; a dry one is not. And when the recipe uses more than 3 eggs, consider making something else instead of fighting the chemistry.

Where egg substitutes fail

Some recipes do not survive an egg swap, and it saves time to know which ones before you start.

For anything with an egg allergy in the house, read every label. Some commercial egg replacer powders are egg-free, and some are not. Carton liquid egg substitutes are usually real egg white, so they are not safe for an allergy at all.

Store-bought flax and chia both keep for months in a sealed container in a cool cupboard. Ground flaxseed goes rancid faster than whole, so keep it in the freezer if you use it often.

Frequently asked questions

What can I use instead of 1 egg?

1 tablespoon of ground flaxseed mixed with 3 tablespoons of water, 1/4 cup of applesauce, half a mashed banana, 3 tablespoons of aquafaba, or 1/4 cup of liquid egg substitute. Each behaves differently, so pick based on what the egg does in the recipe.

How much applesauce equals one egg?

1/4 cup of unsweetened applesauce. It adds moisture and a little sweetness, so it works in muffins, quick breads and pancakes, but it can weigh down a light sponge cake.

How do I make a flax egg?

Stir 1 tablespoon of ground flaxseed into 3 tablespoons of water and let it sit 5 to 10 minutes until it turns gel-like. One flax egg replaces one egg and works best in cookies, pancakes and veggie burgers.

How much aquafaba replaces one egg?

3 tablespoons of the liquid from a can of chickpeas, about 45 ml. Whip it for a meringue or use it straight as a binder. It is the closest thing to egg white.

How many eggs can I replace in a recipe?

Two, sometimes three. In a recipe with 4 or more eggs, the eggs carry most of the structure, so replacing more than 2 usually gives a flat or gummy result.

What is the best egg substitute for binding?

A flax egg or a chia egg. Both form a gel that holds meatloaf, burgers and cookies together. Use 1 tablespoon of ground seed plus 3 tablespoons of water per egg.

What is the best egg substitute for a cake?

For lift, use 1 tablespoon of vinegar plus 1 teaspoon of baking soda per egg, or 2 tablespoons of oil, 1 tablespoon of water and 2 teaspoons of baking powder. For moisture, 1/4 cup of yogurt or buttermilk works well.

Does liquid egg substitute work for baking?

It works for scrambled eggs and for some batters, but the carton product is mostly egg white, so cakes come out drier and less tender. Use 1/4 cup (4 tablespoons) per egg.

How much does a large egg weigh?

A large egg in the shell weighs about 2 ounces (57 grams). Without the shell it is about 1.7 ounces (50 grams), which is roughly 3 tablespoons of egg, about 2 tablespoons of white and 1 tablespoon of yolk.

Can I just leave the egg out?

Sometimes. In a recipe that uses 1 or 2 eggs for richness, leaving them out works if you add 2 to 4 tablespoons of extra liquid. In cakes and custards the eggs are structural and cannot be skipped.

Why did my egg-free muffins turn out gummy?

Usually too much binder. Flax and chia gels are heavy, so when you replace 3 or more eggs the crumb turns dense. Cut the substitute to 2 eggs' worth and add 2 tablespoons of extra liquid.

Are egg substitutes safe for an egg allergy?

Flax, chia, applesauce, banana, aquafaba and commercial egg replacer are all egg-free. Read labels carefully, because some commercial replacers and carton liquid substitutes still contain egg white.

Do egg substitutes work for scrambled eggs?

Only the carton liquid substitutes and a tofu scramble. Flax, chia and banana are for baking and binding, and they will not scramble.
